I always welcome March with open arms, spring is flourishing and it hosts two of my favourite holidays, St. Patricks Day and Mother’s Day. Great excuses to celebrate with delicious dishes. St. Patricks Day I’ll serve my mothers famous stew, followed by my Mini Guinness’s, light fluffy shots of chocolate. For Mothers Day I’m planning an afternoon tea with dainty finger sandwiches and a delectable coffee cake.
In the restaurants I’ve just launched the new spring menu and so here are a few of my stand out dishes - Lemon roast chicken with pan fried gnocchi inspired by the wonderful Balthazar in New York and go-to starter for easy spring entertaining Asparagus, Ricotta and Mint Tartlets.
