Amalfi Chicken

Serves 4

INGREDIENTS:

8 chicken thighs, bone in and skin on 

3 tbsp extra virgin olive oil 

8 whole garlic cloves, peeled 

180g green olives, sliced 

4 preserved lemons, thinly sliced 

100ml chicken stock 

2 tbsp fresh mint leaves, chopped  

sea salt and freshly ground black pepper 

METHOD:

1. Preheat the oven to 180°C / 350°F. Season the chicken on both sides with salt and pepper.

2. Place a large casserole dish or roasting pan over a medium heat and add the olive oil. When the oil is hot, add the chicken, skin-side down, and sear until golden brown, 5 to 6 minutes. Add the garlic cloves to the pan and flip the thighs over. Cook until the garlic is fragrant and has gotten a little brown, 2 to 3 minutes. Remove the pan from the heat and add the sliced green olives, preserved lemons and chicken stock.

4. Roast in the pre-heated oven for 40 minutes. Once cooked scatter fresh mint leaves over the top and serve.
