Banana Bread

Makes 1 cake

INGREDIENTS:

110g /1 stick of butter

150g /¾ cup light brown/caster/superfine sugar

190g /1½ cups plain/all purpose flour

1 tsp baking powder

1 tsp baking soda

2 tsp cinnamon 

2 medium eggs

4 bananas well-mashed, very ripe bananas

1 tsp vanilla extract

METHOD:

1. Preheat your oven to 165°C/325°F or Gas Mark 3 and grease and line a bread tin.

2. Beat together the butter and sugar in a large bowl with an electric mixer at high speed until pale and fluffy. Beat in eggs until combined, then add the flour, baking powder, baking soda and cinnamon and continue to mix. Lastly add the bananas and vanilla extract and beat until combined well.

3. Spoon the batter in the bread tin and bake until pale golden and a skewer or knife inserted in the center comes out clean. This should take an hour. 

4. Once the banana bread is cooked, let it cool in the tin for 10 minutes, then lift the cake out of the tin onto the rack to cool completely.
