BBQ Chicken With Lime, Chilli & Coriander

Serves 4

INGREDIENTS:

2 chicken breast fillets, trimmed

1 tbsp olive oil

sea salt and cracked black pepper

juice and zest of 1 lime

2 small red chilies finely chopped or 1 tablespoon of chili flake

METHOD:

1. Start by marinating the chicken. Place the chili, zest and juice of lime, and olive oil in a bowl –season with sea salt and freshly ground black pepper and whisk together. Putthe chicken in bowl and pour the marinate on over the chicken and rub the marinade into the breasts.

2. Preheat a char-grill pan over high heat andcookthe marinated chickenfor 4–5 minutes on eachside or until cooked through. Remove from the heat and thinly slic
