BBQ Gambas Pil Pil

Serves 4

INGREDIENTS:

24 fresh raw prawns, peeled

100ml olive oil

4 cloves garlic, thinly sliced

1 tbsp dried chili flakes

1 tbsp flat leaf parsley, finely chopped

sea salt and freshly ground black pepper

1 lemon

4 slices of sourdough bread

METHOD:

1. Place the prawns in a large mixing bowl and add the garlic, chilli and half the olive oil. Season with sea salt and freshly ground black pepper, and mix well. Place in a fridge to marinate for 30 minutes.

2. Get your BBQ nice and hot and grill the marinated prawns for 2 minutes on each side, until they just turn pink.

3. Griddle the sliced sourdough bread on the BBQ on each side and place them on four dishes. Drizzle the remaining olive oil over the toast, and spoon the prawns on top. Add a squeeze of lemon on each, a sprinkle of flat leaf parsley and EAT!
