Blood Orange & Rosemary Fizz

Makes 1

Ingredients:

Ice

60ml fresh blood orange juice

15ml aperol or campari

15ml rosemary sugar syrup

60ml prosecco

1 slice of blood red orange, for garnish 

1 rosemary sprig, for garnish

For the rosemary sugar syrup

(make enough for 2 cocktails) 

120ml water

110g sugar

1 rosemary sprig

Method:

1. Start by making the rosemary sugar syrup. In a small saucepan, combine the water, sugar and rosemary sprig. Warm over low heat, stirring, until the sugar dissolves. Remove from the heat and let stand for 30 minutes. Discard the rosemary and refrigerate in an airtight container.

2. To make the cocktail, fill a cocktail shaker with ice. Add the blood-orange juice, aperol and rosemary sugar syrup. Shake well and strain into a champagne coupe or flute. 

3. Top with the prosecco and garnish with a slice of blood red orange and rosemary sprig.
