Cauliflower Cheese With A Crunchy Breaded Cheese Topping

Serves 4 

INGREDIENTS:

1 small cauliflower

60g / 1/4 cup butter

60g / 1/2 cup flour

400ml / 1 2/3 cups milk

100g / 1 cup cheddar cheese

4 teaspoons Dijon mustard or 2 teaspoons of English mustard

For the topping

50g / 3 tbsps butter, melted

80g / 1 1/2 cups breadcrumbs

50g / 1/2 cup cheddar cheesesea

salt and freshly ground black pepper

METHOD:

1. Pre-heat the oven to 170oC/340F/Gas3.

2. Remove the outer leaves from the cauliflower and coarsely chop. Break up the cauliflower into florets and place the cauliflower florets in a saucepan with about 2.5cm of water. Cook on a medium heat for 10 minutes (you wantthem slightly undercooked as they will be going in the oven too).

3. In a separate saucepan, melt the butter and whisk in the flour. Cookfor two to three minutes, stirring constantly. Then add the milk,whisking continuously to ensure that no lumps form. Stir in thegrated cheese and mustard. Season with sea salt and freshly ground blackpepper.

4. Place the cauliflower in an ovenproof dish and pour overthe cheese sauce.

5.Next make the crunchy topping. Mix together the cheddarcheese, melted butter and breadcrumbs. Sprinkle the topping over the cauliflower cheese.

6.Bake in the pre-heated oven for 20 minutes and serve
