Elderflower Cordial

Elderflower cordial Clodagh McKenna

Makes 1 litre / 4 1/2 cups

INGREDIENTS:

20 elderflower heads

1 litre / 4 1/2 cups water

600g / 4 cups sugar

6 lemons

METHOD:

1. Wash your elderflowers by gently bathing them in water. Cut off any stems.

2. Place a large saucepan over a medium heat and add the water and sugar. Stir until the sugar has dissolved. This makes the sugar / simple syrup.

3. Add the elderflowers to the syrup, bring to the boil for 10 minutes. Then remove from the heat, stir in the juice and zest of the 6 lemons. Leave to infuse for 24 hours.

4. After infusing, strain the cordial through a sieve, and that’s it!
