Italian Spicy Sausage Pasta

Serves 2

INGREDIENTS:

Olive oil

400g quality Italian fennel sausages, cut into 1 inch pieces

1/2 tsp dried chilli flakes

3 cloves of garlic, crushed

1 tsp dried oregano

1 tbsp tomato purée

1 can of cherry tomatoes

Sea salt and freshly ground black pepper

250g trofie pasta

30g Parmesan cheese, grated

METHOD:

1. Place a small casserole dish or saucepan over a medium heat and add 2 tablespoons of olive oil. Once the oil has warmed, stir in the sausage, and brown.

2. Next add the chilli, garlic and dried oregano, and cook for 3-4 minutes. Stir in the tomato puree, and tinned tomatoes. Season well with sea salt and pepper. Reduce the heat to low and simmer for 20 minutes.

3. Cook the trofie pasta in a saucepan of boiling salted water for 10 minutes. Drain and stir into the spicy sausage.

4. Serve with a grating of fresh parmesan cheese.
