Sundried Tomato Pesto

Makes 200ml

INGREDIENTS:

40g pine nuts

260g semi-dried tomatoes in oil, drained

1 red chilli, deseeded and roughly chopped

1 garlic clove, crushed

1 tbsp fresh flatleaf parsley

125ml extra-virgin olive oil

25g Parmesan, finely grated

Sea salt and freshly ground black pepper

METHOD:

Place all the ingredients in a food processor, season with sea salt and freshly ground black pepper. Blend until you reach a smooth consistency
