Vegetable Wonton Soup

Serves 2

INGREDIENTS:

2 scallions, thinly sliced

6 slices ginger

1 tbsp olive oil

1 litre chicken or vegetable broth (stock)

10–14 vegetarian wontons

Sea salt and freshly ground black pepper

a handful of chopped greens-baby spinach, bok choy, chopped kale, purple sprouting broccoli

Garnish:

thinly sliced scallions, coriander, sesame seeds or chilli flake

METHOD:

1. Place a medium sized saucepan over a low heat and add one tablespoon of olive oil. Stir in the scallions and ginger and cook for two minutes. Next stir in the vegetable broth, and increase the heat to medium.

2. Add the wontons and greens to the stock, and keep stirring. They should all only take about three minutes to cook. Season with sea salt and freshly ground black pepper.

3. Divide among two warmed bowls and sprinkle with any of the garnishes.
