White Yeast Bread

Makes 1 loaf

INGREDIENTS:

500g white plain/all-purpose flour

2 x 7g sachets of fast active yeast

300ml tepid water

1 dstsp of sugar

1 egg or milk, whisked

2 tsp sesame seeds

METHOD:

1. Whisk together the tepid water, yeast and sugar. Leave to activate for 5 minutes – you will see bubbles start to appear.

2. Place the flour in a large mixing bowl, and pour in the yeast mixture slowly into the well of the flour, and use a fork to work the flour into the yeast mixture. Keep mixing with the fork until a dough starts to form. Then tip the dough onto a lightly floured surface and knead for five minutes. To knead you just simply stretch the dough and then bring it back, turn and repeat.

3. Then pop the kneaded dough into a lightly floured bowl, cover with a damp cloth or clingfilm and leave to proof (rise) for 1 hour, in a warm spot.

4. Once the dough has risen, remove from the bowl and knock it back, by kneading for 30 seconds. Next shape the dough into whatever shape you want. Cover and leave to proof (rise) again for the second time of 1 hour.

5. Pre-heat the oven to 180°C/360°F/Gas mark 4.

6. Lastly egg wash the bread or brush with milk, and sprinkle the sesame seeds on top. Place in the pre-heated oven for 30 minutes. Remove once baked and allow to cool on a wire rack.
