Brilliant Breakfast: Prince's Trust 2022

So happy to be part of this years The Brilliant Breakfast Prince’s Trust an incredible (and fun!) initiative to help raise funds to enable the Prince’s Trust to provide disadvantaged young women with the confidence and opportunities they need to improve their prospects and transform their lives.

Set yourself up for the day by hosting a Brilliant Breakfast for friends, family or colleagues between 10th and 16th October.

Get them to donate for the delicious breakfast, it could be as little as £5, everything helps!

BANANA AND PEANUT BUTTER MUFFINS
Makes 10

INGREDIENTS:
250g self-raising flour
1 tsp baking powder
½ tsp bicarbonate of soda
110g light muscovado sugar
100g crunchy peanut butter
25g butter, melted
2 eggs
2 large ripe bananas, mashed
200ml buttermilk (or add 1 tsp of lemon juice to milk and leave for 20 mins)
10 thin slices of banana

METHOD:
Pre-heat the oven to 190C/170C Fan/gas 5. Line a 12-hole muffin tin with paper cases.

Sift together the flour, baking powder, bicarbonate of soda and caster sugar with a big pinch of salt. In a separate bowl mix the melted butter, peanut butter, eggs, mashed bananas and buttermilk.

Make a well in the centre of the dry ingredients and pour the wet ingredients in. Roughly mix together with a fork, being careful not to over-mix. Spoon the mixture into the muffin cases. Top with a slice of banana, then bake for 20-25 mins, until golden brown.
