Almost-Instant Orange Scones

Makes 10 scones

INGREDIENTS

450g plain flour

2 tsp baking powder

2 tsp sugar

pinch of sea salt

100g butter, chilled and cubed

Zest and juice of 1 orange

300ml buttermilk

For the topping

2 tsp caster sugar

Zest of 1 orange

METHOD

Preheat the oven to 200°C (fan)

Sieve the flour and baking powder into a large bowl. The stir in the sugar and a pinch of salt. Rub the butter into the flour mixture using your fingertips until it resembles fine breadcrumbs. Gradually pour in the milk, orange juice and zest and mix together to make a soft dough.

Roll out the dough on a floured surface to a thickness of 1cm (1/2in). Cut into circles with a pastry cutter or an upturned glass. Brush the scones with the remaining milk and a sprinkle of sugar, and zest of orange. Place the circles on a floured baking tray.

Bake in the preheated oven for 15 minutes. Once baked leave to cool on a wire rack.
