Blissful Banana Pancakes
Serves 4
INGREDIENTS
250g plain flour
2 tbsp brown sugar
2 tsp baking powder
1 tsp bicarbonate of soda
3 eggs
300ml buttermilk
3 ripe bananas, mashed
50g butter
METHOD
In a large bowl stir together the flour, sugar, baking powder and bicarbonate of soda. In a separate bowl whisk the eggs, next whisk in the buttermilk and lastly the mashed bananas. Pour the wet ingredients into the dry ingredients and gently whisk together. Cover and place in the fridge to rest of about 30 minutes.
When you are ready for the pancakes, place a frying pan over a medium heat and add the butter. Once the butter has melted swirl it around the pan so the pan is greased with the butter. Using a ladle spoon the pancake batter into the pan, making sure to leave plenty of room in between for the batter to expand.
Cook until the batter bubbles on the surface and browns on the bottom, a minute or two, then carefully flip. Cook until the batter is completely cooked through and the pancakes are slightly dark brown. Repeat until all the batter is used.
I like to serve the banana pancakes with warmed honey.
