Homemade Granola

Makes 1kg

INGREDIENTS

500g rolled oats, 

50g hazelnuts, chopped

50g walnuts, chopped

50g almonds, chopped

80g coconut flakes

75g pumpkin seeds, 

75g sunflower seeds, 

2 tsp cinnamon

2 tbsp coconut oil

150ml honey

300g of dried fruit, any of these: apricots, golden raisins, sultanas, cranberries 

METHOD

Preheat the oven to 180oC (fan). Line a baking tray with greaseproof paper.

In a large bowl add the oats, hazelnuts, walnuts, almonds, coconut flakes, seeds and cinnamon. Drizzle in the coconut oil and honey. Stir until combined. Tip the granola onto the prepared baking tray.

Place in the pre-heated oven for 30 minutes, stirring the mixture every five minutes so that it gets evenly toasted.

After the granola has been cooking for 15 minutes stir in the dried fruits and continue to roast.

Remove from the oven and allow to cool, stirring every few minutes so that the granola doesn’t stick together.
