If you grow your own vegetables, you probably grow spinach and therefore have an abundance of it for a lot of the year! This is one of my favourite dishes to make when I want an easy warming bowl for supper and it is made with storecupboard staples – red lentils, chickpeas and coconut milk, and a few simple spices. If it starts to get a bit dry, add in hot vegetable stock or water.
Prawn laksa (spicy noodle soup). This quick meal for two hails from Malaysia and takes just 20 minutes to prepare. Warming prawn noodle broth with spicy Laksa paste is topped with coriander and lime wedges.
This three-bean vegetarian chili is a wonderfully simple, one-pot no-fuss dish. The results are magical, a richly flavoured meal that only gets better with time, like a fine wine, if you can make it a day ahead. Serve it up in a large warmed bowl for everyone to help themselves, along with smaller bowls of guacamole, rice, grated cheese and tortilla chips. The perfect Friday night feast!
