Fast Flapjacks

Makes 12

INGREDIENTS:

260g/2½ cups jumbo/rolled porridge oats 

130g/4½oz butter, cubed 

130g/⅔ cup light or dark brown sugar

¾ tbsp maple syrup, honey or golden syrup

100g/⅔ cup raisins, sultanas, chopped dried apricots or chocolate nibs (optional)

METHOD: 

1. Pre-heat the oven to 180°C /360°F/Gas 4.

2. Place the jumbo porridge oats, cubed butter, brown sugar and the maple syrup in a food processor and pulse until combined and the mixture sticks together.

3. Line a baking or roasting tin (20x20cm) with greaseproof/parchment paper and spoon in the mixture. Press into the corners with the back of a spoon so the mixture is flat.

4. Bake in the pre-heated oven for around 15 -20 minutes, depending on how thick you made them. Bake until they are a light golden brown.

5. Once you take them out of the oven, using a knife score it into 12 squares. And then remove the individual squares on to a cooling rack to cool completely.
