Strawberry & Sweet Geranium Leaf Jam
INGREDIENTS:
1 kg fresh strawberries
400g jam sugar
2 tbsp honey
12 sweet geranium leaves
1 lemon, sliced

Place the strawberries, sugar and honey into a large saucepan or casserole dish. Swish the strawberries into the sugar using a potato masher, leaving a few chunky bits of strawberry in there to add a bit of texture. Then add the sweet geranium leaves, and stir.
Place the pan over a medium heat, bring it to the boil, stirring as you do, then simmer for about 10 minutes. Turn the heat off, carefully skim any foam off the top of the jam then leave it to cool a little.
After about 20 minutes, divide the jam between your sterilized jam jars. Leave to cool completely then cover the jars and pop them in the fridge. Once sealed, the jam will keep for about a week.
HOW TO STERILISE JARS
Pre-heat the oven to 180oC/Gas Mark 4
Check that the jars have no chips or cracks.
Wash the jars and lids thoroughly in hot soapy water, rinse and dry.
Line a roasting / baking tray with parchment paper
Place the clean jars and lids on the parchment paper and into the pre-heated oven for 10 minutes.
Remove from the oven at 10 minutes and allow to cool.
