Chicken & Broccoli Salad with Lime Yogurt Dressing

Serves 2

INGREDIENTS:

2 skinless chicken breasts

1 lime, zest and juice

200ml natural yogurt

2 cloves of garlic, crushed

1 tbsp fresh basil leaves

1 tbsp fresh mint leaves

2 anchovies

180g broccoli, cut into small florets

1 head of romaine lettuce

1 avocado, sliced

2 tsp pumpkin seeds

Sea salt and freshly ground black peppe

METHOD:

1. In a bowl mix together the ½ the juice and zest of lime, 100ml yogurt, 1 crushed garlic, and season with sea salt and freshly ground black pepper. Flatten the chicken in between 2 sheets of cling film using a rolling pin to flatten to about 1 cm thick. Place the flattened chicken in the yogurt marinade, making sure the chicken is completely coated. Leave to marinate for 10 minutes in the fridge.

2. Make the dressing by placing the remaining yogurt, garlic, lime, anchovies, basil and mint in a blender and whizz until you get a smooth consistency.

3. Cook the broccoli in a pan of boiling water for 3 minutes,drain and set aside to cool.

4. Place a frying pan over a medium/high heat, and cook the marinated chicken on each side for 5 minutes.

5. Arrange the lettuce leaves, broccoli and avocado on 2 plates (or a sharing platter) and sliced the cooked chicken on top.Drizzle the dressing over the salad and sprinkle the pumpkin seeds on top
