Individual Summer Berry Trifles

Serves 6

You will need 6 martini glasses or similar

INGREDIENTS:

For the rest of the trifle

200g madeira cake, sliced and cut into small 1-inch pieces

500ml mascarpone

1 tbsp vanilla extract

500ml tub custard

300ml double cream, softly whipped

For the summer berry jelly

750g mixed summer berries โ€“ raspberries, sliced strawberries, loganberries

75g caster sugar

6 gelatine leaves

6 sweet geranium leaves

METHOD:

Place a layer of the madeira cake at the bottom of each martini glass.

In a mixing bowl whisk together the mascarpone, vanilla extract and custard until smooth but make sure it doesnโ€™t get to runny, you want it to remain slightly thick. Spoon a layer on top of the madeira cake, this should use about half of the mixture.

Next make the summery berry jelly. Soak the gelatine leaves in cold water and set aside. Place the berries, sugar, vanilla and sweet geranium leaves (optional) into a large saucepan and bring to the boil. Remove from the heat, add the strained gelatine and stir thoroughly.

Remove the sweet geranium leaves from the jelly mixture, and then pour the jelly mixture over the custard mix in the martini glasses. Place in a fridge for an hour to set.

Once the jelly has set spoon the remaining custard mix on top, followed by a spoon of softly whipped cream

Garnish with fresh berries and grated dark chocolate.
