Watermelon, Feta & Oregano Salad
Serves 4
INGREDIENTS:
2 red onions, finely sliced
1 tbsp red wine vinegar
1 watermelon approx. 400g
450g cherry tomatoes
1/2 cucumber
12 green olives
250g feta cheese
2 tablespoons extra virgin olive oil
1 tsp dried oregano
2 tsp fresh mint, torn
2 tsp fresh dill, torn
Juice of 1 lemon
sea salt and freshly ground black pepper
METHOD:
Place the finely sliced red onions in a serving bowl and add one tablespoon of red wine vinegar, and a pinch of sea salt. Toss together and set aside to pickle while you prep the other ingredients.
Peel and chop the watermelon into cubes, slice the cherry tomatoes in half and cut the cucumber into small cubes, and place them all and the green olives in the serving bowl with the pickled red onions.
Crumble the feta on top, add two tablespoons of olive oil, the herbs and the juice of one lemon.
Season with sea salt and freshly ground black pepper and toss well.
