Ah yes, my Guinness Irish Soul Soup, what could be better? This is all I want to eat at the moment – warming and nourishing, like a big hug for the soul. It’s the perfect midweek supper, or starter for your St Patrick's Day celebration, and it’s a fool-proof recipe that you can make without too much effort when you get home from work. There are lots of things you can add to it – noodles, potatoes, rice, pasta, kale, spinach. I have added #Guinness for added depth of flavour - roasted, sweet malty notes that add a delicious warmth to the soup.

This dish couldn’t be easier to make – it takes about 20 minutes to prepare and 20 minutes to cook. You can prepare this gratin the day before and then just pop it in the oven 20 minutes before you want to serve it. Fennel is the perfect partner for white fish as the aniseed taste lifts the flavour and the dill adds so much freshness. I love serving this dish with fluffy basmati rice and a green leaf salad.
